Cheddar and Chorizo Dip

Only three ingredients are required to make this delicious Chorizo Queso Dip!

Pickleball, arcade games, bocce ball, corn hole, and most importantly, a bar are some of the activities that my parents, Ben, and I took the children to enjoy at a really fun restaurant in town that we went to last month. What can I say? When a server comes by to provide Whiteclaws in between matches, it makes the pain of losing pickleball to your father who is over 60 years old and has two knees that are in poor condition a little less painful.

There are also a lot of gluten-free alternatives available on this restaurant’s menu, which includes a half sheet pan of nachos that they refer to as a “Sheet Ton of Nachos.” This restaurant also has a fantastic cuisine selection. (It’s only a joke.) That being said, if there is one thing you absolutely must know about me, it is that nachos are my kryptonite. After finishing up our afternoon of fun, I naturally placed an order for nachos for dinner because I am a huge fan of them.

To all of you, I have nothing more to say but QUESO. As a result of the fact that these nachos were saturated with queso, I drank…a considerable amount of it. Because it is so uncommon to get queso on gluten-free nachos, I felt compelled to make the most of this opportunity. As a result, I came up with the idea that if their kitchen could create gluten-free queso, then I could do the same thing. This led to the creation of Chorizo Queso Dip, which is the ultimate game day dip.

The combination of sizzling chorizo, creamy American cheese, chopped tomatoes, and green chilies is going to be irresistible to you, regardless of whether you choose to indulge in this delicious and creamy dip by dousing a plate of tortilla chips with it or by keeping it warm in a slow cooker so that you can scoop it up and enjoy it as you like. You read it correctly; this incredible dish just requires three ingredients.

I was requested by Red Gold to come up with a recipe to commemorate the season of tailgating and football, and I can’t wait for you to test out this gluten-free dip recipe. However, I wanted to give it a new spin by using chorizo instead of beef and white American cheese instead of processed orange cheese (you know the one…). Beef & Queso Dip is usually a popular option for game day, but I wanted to give it a new spin.

After a challenging match of pickleball, you will be looking forward to savoring this dish, which is not only amazingly simple but also very popular among the crowd.as well as while you are watching your favorite football team compete against one another on the pitch!

Ways to Prepare a Queso Dip with Chorizo

A Mexican-style pork chorizo of 8 ounces should be browned first. My opinions are regarding the fact that some store-bought chorizo has a flavor that is strongly reminiscent of clove and/or cinnamon. I have included my preferred brand in the notes portion of the recipe card that is provided below.

Put the chorizo that has been cooked onto a plate that has been lined with paper towels so that it can drain, and then arrange a couple of additional paper towels on top of it to soak up as much grease as possible. In the event that you do not complete this step, the grease will surface on top of the queso dip. Not a good thing!

Next, cut half a pound of gluten-free white American cheese into cubes and place them in a large bowl that is appropriate for the microwave. The recipe card that follows also includes the brand of gluten-free American cheese that I find to be my personal preference.

Put a can of Original Tex-Mex Petite Diced Tomatoes and Green Chilies, 10 ounces, into the cheese and make sure it is not drained.

The cheese and tomatoes should be microwaved in increments of one minute, with stirring performed in between each increment, until the cheese is completely smooth.

The final step is to incorporate the chorizo that has been drained. Only that was written by her!

One option is to serve the Chorizo Queso Dip immediately with tortilla chips. Alternatively, you can pour it into a slow cooker and set it to warm so that you can scoop it up and dip it whenever you like. In the event that the dip becomes too thick, you are free to add a little bit of milk.

I absolutely adored the dip that was topped with a scoop of fresh pico de gallo (the recipe for this dish can be found in the comments portion of the recipe card that can be found below). Although it is not required, the lime juice’s tangy flavor is extremely delicious when combined with the chorizo queso. Oh my goodness…I can’t wait!!!
