One of the most significant advantages that orecchiette has over other types of pasta is that it is shaped like a cup, which makes it an ideal vessel for storing specialized pasta sauces. Orecchiette could not be a better choice than the creamy tomato sausage pasta sauce that is featured in this dish.
The devilish? Indeed. Have a salad a day from now!
This is a close-up of the Orecchiette Sausage Pasta cooking in Creamy Tomato Sauce in the pan, which is now ready to be served.
Pasta with Orecchiette and Sausage
Isn’t it frustrating when you take a huge pile of spaghetti and turn it around on your fork, only to discover that you have nothing but noodles and no toppings or other ingredients?
Even more frustrating is the situation in which you bring it up to your lips and loose strands slap about your mouth, causing spaghetti sauce to splash all over your face, including your white top.
Our life of pasta-loving presents us with obstacles such as these.
To our great relief, the Italians devised a solution in the form of little noodles in the shape of cups called “orecchiette.” These pastas serve as miniature scoops that are used to store spaghetti sauce. Just how ingenious is that?! ๐ ๐ป
Pasta made with orecchiette
As a matter of fact, I am not aware of whether orecchiette pasta was developed in order to address the issue of spaghetti that is slathered with sauce, splattered with noodles, and lacks toppings.
I am just aware that it is quite useful, and I believe that we need to make use of it more often! ๐
(PS: and in point of fact, you can use it for nearly any dish that calls for pasta. Is anybody interested in Orecchiette Bolognese?
The pasta sauce that I am going to share with you today is a flavorful, delicious, creamy tomato sausage sauce that I believe is worthy of being served over orecchiette. The teeny-little pieces of sausage that were tucked away in those tiny cups and covered in that velvety sauce! Oh my goodness! It’s so wonderful that it ought to be against the law!
The word “ear” in Italian is “orecchiette,” which is a reference to the form of this sort of pasta, which is similar to an ear.
Required ingredients for making Orecchiette with Sausage Pasta
So, this is what you require:
Sausages from Italy: the quality of the sausage determines the quality of the sauce. Despite the fact that Italian sausages are only available in link form in Australia (as seen in the image above), it is not difficult to extract the flesh from the links. In point of fact, everybody who has spent their whole life in the kitchen preparing sausages is well aware that the flesh is eager to escape from the casings!
To provide a contrast to the opulence of the sauce, kale is used. Also, spinach is an excellent choice here;
Not only does the addition of tomato passata or puree make the sauce more thick, but it also imparts a delightful tomato flavor that helps to balance off the richness of the cream and sausage. Tomato Passata, which is known as tomato puree in the United States, is nothing more than pure, unprocessed tomato that has been pureed and filtered. You can now get tomato passata at shops in Australia. You don’t need to worry about it if you can’t locate it since you can easily substitute crushed tomato or even tomato paste (the proportions are included in the recipe);
For an increase in flavor, parmesan cheese!
Both cream and milk are used in the preparation of the sauce. While cream contributes to the sauce’s richness, milk helps to thin it down further while preserving the sauce’s wonderful pink color.
Because garlic is used in so few of my recipes, garlic is a necessary ingredient.
When it comes to the sausages, Italian herbs are a perfect complement. Simply use a premix acquired from a retailer. We receive a lot of flavor from the sausages, so it’s not the end of the world if you don’t use dry herbs in this dish; and
Red pepper flakes, often known as chili flakes, are used to provide a touch of warmth. To be chosen!
Instructions for preparing orecchiette sausage pasta
There is nothing special about the process of creating! Due to the fact that the sausage pasta sauce can be prepared in the same amount of time as the orecchiette pasta, which is twelve minutes, this dish is an excellent choice for a fast meal.

It is important to steer clear of the inexpensive sausages that are all the same shade of pink since they are laden with fillers. As seen in the image above, you should look for sausages that include flecks of meat and white fat.
The fact that this is a full dinner is something that I would love to be able to tell you about here…However, it is a little bit lacking in terms of the amount of greens! ๐ As a result, you should complement it with a crisp salad that is served on the side. Here are some suggestions:
Are you aware of something? I have now come to the realization that I neglected to highlight yet another extremely significant quality of orecchiette pasta:
This indicates that it belongs to a vital category of cuisine that I refer to as Couch cuisine. Couch Food is food that can be consumed with a spoon without requiring the viewer to take their eyes from the television.
Alternatively, a dreary book. Alternatively, a rag-mag.
Simply put, something that demands very little mental effort on your part so that you can focus on savoring each and every bite!
PS I guess it is possible to consume this while reading anything that is a little bit more cerebral, but I simply believe that my brain would explode with all of that wonderful food going on in my mouth, in addition to having to concentrate while I was reading. It is just not possible for my brain to process such information. ๐
