We have found our new favorite spaghetti recipe to make at home! There has been an unusual amount of time lately that Jack and I have spent in the kitchen trying with various baked items, breads, and even okonomiyaki. Still, handmade pasta is a staple in our diet. With only a few simple ingredients, you can whip up this delightful treat in no time at all. The fact that it tastes really good is also a plus. 🙂
When I say “pasta maker attachment for the KitchenAid Stand Mixer,” I mean just that—that’s how we create our handmade pasta. No need to fret if you are missing a KitchenAid. Another option would be to use a standard pasta machine and follow the manufacturer’s directions to roll out the dough. In any case, I do hope you give this dish a go. Recipe for Homemade Pasta What You Need
Fresh pasta is easy to prepare at home with only four ingredients, and chances are you probably already have all of them:
All-purpose flour—This handmade pasta recipe disproved my previous belief that 00 flour or semolina flour were necessary for producing excellent fresh pasta. It always makes chewy, bouncy noodles with normal all-purpose flour.
The dough’s richness and wetness are enhanced by eggs, the dough’s most important component.
Olive oil—A little olive oil, in addition to the eggs, will allow the dough to join together and be more pliable.
For the most flavorful pasta, add salt to both the dough and the water.

On a fresh surface, arrange the flour into a nest. Spoon the rest of the ingredients into the middle and crack the eggs gently with a fork. Maintain as much integrity as possible for the flour walls!
After that, slowly incorporate the flour using your hands. Gather the dough into a shaggy ball by continuing to work it.
Next, work the dough by kneading it. Do not give up if the dough seems quite dry when you first work with it. Even though it doesn’t seem like it will come together at first, kneading it for 8 to 10 minutes should make it smooth and cohesive:

If the dough is still too dry after kneading, add a little water to your fingertips and keep working the dough. Additional flour may be sprinkled onto the work area if the dough too sticks.
Once the dough combines, roll it into a ball and cover it with plastic. After mixing, the dough needs 30 minutes to relax at room temperature.
-Separate four pieces of fresh pasta dough.
-Cut the dough into four equal halves when it has rested.
-Gently flatten one into an oval disk using a rolling pin or your fingertips.
-Then, using the KitchenAid attachment, put it through the pasta machine on the widest setting (level 1). Before moving on to the next step, I make sure to run the dough through the pasta machine three times on this setting. To create pasta without the KitchenAid attachment, just follow the manufacturer’s directions for rolling out the dough.
-After that, fold the dough in half, if desired. You may produce longer strands of spaghetti by making the finished pasta sheet more rectangular; this step is mostly optional, however. Not to mention how easy it is! To make a simple knot, just flatten the dough and bring the two shorter ends together.
-Next, make a rectangular shape by folding it in half lengthwise.
-Roll out the dough to the thickness you like after folding it. When I use the pasta roller attachment on my KitchenAid, I go through the attachment three times on level 2, three times on level 3, and once on levels 4, 5, and 6.
-Using the remaining pieces of dough, repeat the process. After handling each piece of dough, divide it in half and place one half on a baking sheet that has been gently dusted with flour. Before folding in half, sprinkle flour over the dough. Toss in some flour on top, too!
-Cut the spaghetti and cook it last. Pass the spaghetti sheets through the pasta cutter attachment of your choice. After a minute in boiling salted water, the noodles are ready to eat!
